Changes in Elderberry (Sambucus nigra L.) Juice Concentrate Polyphenols during Storage

Elderberry (Sambucus nigra L.) juice concentrate is highly rich in polyphenols, particularly anthocyanins and flavonols, which have been associated with a wide range of health-promoting properties. Phenolic compounds, particular anthocyanins, are unstable may change during storage, might influence the product color quality its potential health effects. The aim this study was to evaluate changes polyphenols profile elderberry produced at an industrial scale seven months storage 5 °C room temperature. total phenolic content, monomeric percent polymeric color, ABTS•+ scavenging activity were monitored over time. In addition, content main individual compounds also assessed by HPLC-DAD. results show that cyanidin-3-O-sambubioside, cyanidin-3-O-glucoside, cyanidin-3-O-sambubioside-5-O-glucoside, cyanidin-3,5-O-diglucoside, chlorogenic acid, rutin, quercetin-3-O-glucoside identified. Storage temperature resulted strong reduction anthocyanin accompanied increase values. Cyanidin-3-O-sambubioside cyanidin-3-O-glucoside degraded faster than cyanidin-3,5-O-diglucoside cyanidin-3-O-sambubioside-5-O-glucoside. Concentration acid decreased whereas rutin quite stable. caused lower impact on contents not affected. vitro antioxidant remained similar time, for both temperatures, suggesting concentrates still preserve their benefits capacity after storage.
